Quick and Easy Summer Vegetable Skillet Pasta

Total Time:  39 Minutes
Yield:  4 Servings

Quick and easy way to use the summer vegetables right from your garden or the local farm stand

RECIPE INGREDIENTS

1 cup diced Vidalia Onion
3 cloves garlic chopped fine
1 pound zucchini squash
1/2 pound green or yellow garden beans
4 small seeded and diced Roma tomatoes
1/2 teaspoon house seasoning (1 tablespoon salt, 1 teaspoon garlic powder and 1 teaspoon ground black pepper)
6 oz cooked ziti or other favorite pasta
1 cup cooked chicken (I used left over grilled chicken breast)
1/2 cup sour cream
1/2 cup chicken stock
3/4 cup cheddar cheese (four cheese Pizza Mix works well)
1/4 cup parmesan cheese
   
DIRECTIONS

Saute onion for 5 minuets, add garlic and saute 3 more minuets. Add all vegetables except tomatoes and saute for three minuets. Add tomatoes, chicken and seasoning putting in chicken broth and cooked pasta. Cover pan and cook for 10 minuets. Add chicken and pasta, cheese and sour cream. Cook for 2 minuets stir sufficiently to incorporate the sour cream and cheese into a sauce. Serves four, garnish with parmesan cheese to taste.

Pasta is my favorite and I tried to cook this recipe, I really liked it! The veggies tastes really fresh which goes well with ziti. My family also loved this pasta recipe because its easy to cook and the ingredients are common in our kitchen. I hope you'll enjoy it too!
